Seafood is definitely one of the culinary strengths in Batanes and Ginataang Alimasag is a must-try! The locals say that when the crab is on season, they don’t use
coconut milk anymore because the crab secretes its own coconut-milky-like
flavor when cooked.The crustaceans from the group of islands are some
of the largest and juiciest you’ll find anywhere in the world!

Dibang
or flying fish is abundant in Batanes hence you can find them included in much of the restaurants and diners in the province. Variants of cooking dibang range from fried, stewed, smoked or made into a lumpia like the picture above!

3. Pancit Batil Patong

Batil patong is famous as the signature dish in Tuguegarao in
the province of Cagayan in Northern Luzon, Philippines. It is an unusual
sautéed noodle dish served with dark non-soy-based sauce and with two piquant
side dishes: a cup of pork broth and a dish of chopped onions, vinegar or
calamansi, chili peppers, and soy sauce. The noodles are wheat-based and are
served moist and chewy, topped with crushed pork-rind cracklings, and whipped
egg from whence the name bati'l patong literally 'scrambled and placed on top'
is derived.
4. Alcala’s Milk Candy

These sweets are made in a sleepy town called Alcala but the
brands/distributors are different.What makes this sweet different is the texture. It’s very
soft and it’s made from carabao milk – very similar to pastillas. Pastillas was introduced by the
Spanish in the past.

Isabela has kakanin it can proudly call its own. Among them
is Aling Francing’s moriecos, an experiment that eventually became a delicacy.
Aling Francing started selling tupig and bibingka galapong 25 years ago; when
she had ingredient leftovers, she started playing around in the kitchen and
came up with moriecos, sticky rice cake stuffed with latik, or coconut milk
curds, steamed and wrapped in banana leaf.

A restaurant in the town of Cabarroguis, Quirino Province is
known for its specialty adobo dish. Palm Restaurant takes pride in its adobong
pato, an adobo dish cooked with white duck meat. Unlike most duck dishes which
duck meat is usually tough, the duck meat in Palm Restuarant's adobong pato is
rather tender.
8. Nilupak and Nilubyan

Nilupak and nilubyan are creamy, filling snacks that come
packed in banana leaves. Nilupak is made from ground cassava, while nilubyan is
made from bananas.

Nueva Vizcaya is renowned for producing high quality citrus fruits, giving the province the nickname of 'Citrus Capital of the Philippines'. In the municipality of Bayombong, streets are lined with vendors selling citrus fruits like oranges, honey dew, sweet ponkan, yacon, red chandler pomelo, and seedless Satsuma. But if you want to buy wholesale fruits, go for a night shopping spree at Nueva Vizcaya Agricultural Terminal (NVAT) located in the town of Bambang. Most of the citrus fruits are grown in the cold hinterlands of Kasibu where you can also handpick and buy them.

The quail, locally known as pugo, is a small game bird found in temperate and tropical regions throughout the world. Quails by some distinction are classified as “game-hunting” birds and as such, quails should not be compared with chicken. Deep fried and served in crunchy goodness!
